来源：为姜科姜属多年生草本植物生姜（学名：Zingiber officinale Rosc.）的干燥根茎经提取分离纯化制成的提取物。
生姜提取物主要活性物质：姜辣素，姜的辣味成分为姜辣素(姜酚)及分解物6-姜烯酚、8-姜烯酚。姜辣素则是姜酚、姜脑等与生姜有关辣味物质的总称。
